Grown on the Sapphire Coast.
Sapphire Coast Oyster Van is an extension of our 2nd generation family-run oyster farm, Sapphire Coast Oysters. We’re bringing our oysters, our story and the people behind them to events, markets and tables across the region.
Grown in the clean, nutrient-rich waters of Wapengo and Merimbula Lakes on the Sapphire Coast, our Sydney Rock Oysters are a true taste of where we come from.

Jason & Maddie
We’re Maddie and Jason, the people behind Sapphire Coast Oyster Van. From shucking and serving to making you feel welcome, we’re involved in every part of the experience and love sharing what we do.
Jason Rutter
Co-Founder
Jason grew up around the farm his whole life and has been leading operations for over 6 years, overseeing more than 50,000 oyster bags. With a hands-on approach and a deep passion for sustainable oyster farming, he ensures every oyster we serve is of the highest quality.
Maddie Woolford
Co-Founder
Maddie has over 3 years of experience oyster farming, playing a hands-on role both on the farm and behind the scenes, from getting her hands dirty with the oysters to keeping the Van business running. Bright, friendly, and always ready for a chat, Maddie brings a warm, personal touch and a genuine enthusiasm for farm life.

Rodney Rutter
Founder
Rod, affectionately known as ‘Fluff’, built the oyster farm from the ground up and has spent decades working on Wapengo Lake. What began as a business has become a lifelong passion, with Rod’s enthusiasm for oysters, the water, and the craft of oyster farming continuing to shape the farm today.
Mary Rutter
Director
Mary keeps everything running smoothly behind the scenes. She looks after the business side of things, from the office and finances to the many moving parts of running an oyster farm. She’s the glue that holds everything together, making sure things stay on track so the rest of the team can get on with what they do best.

Our farm is supported by a dedicated team who work across our leases on Wapengo and Merimbula Lakes, from tending the oysters on the water to sorting, grading and preparing them in the shed. and harvesting our oysters.
