The “slats”

Born in the Estuary

Sydney Rock Oysters begin life as tiny larvae drifting through the water. Once a year, we place specially prepared slats in the lake to catch the oyster spawn as it settles. Starting as little more than a speck, the oysters attach themselves to the slats and begin to grow. From there, we carefully nurture them for several years until they become the beautiful oysters we harvest and serve.

Shaped by Each Lake.

The oysters grown in Wapengo and Merimbula Lakes develop their own distinctive flavour. Differences in tidal flow, salinity, freshwater, water depth, surrounding vegetation and the lake floor all influence how the oysters grow and taste, even oysters grown in different areas of the same lake can have subtle differences.

What Is Merroir?

The way an oyster’s environment shapes its flavour is known as merroir. Just as soil and climate affect the flavour of wine, the conditions of a waterway influence the taste of an oyster. This means every oyster provides a unique taste of the place where it was grown.
